Your set is eight skewers off the charcoal, then chicken ramen and dessert, for S$59.80.
Yamada-san trained in washoku, the wider tradition of Japanese cooking, long before yakitori. He builds the set as a full meal, with eight skewers leading into chicken ramen and a sweet finish. The skewers change daily, so every night's run is the chef's choice.
Where traditions meet: Before yakitori, Yamada-san farmed and ran his own inn on Okinoerabu Island in Kagoshima. He learned to cook from the land around him.
Dinner happens around the fire, with the grill in full view.
Yamada-san grills every skewer on a 150 kg charcoal grill in full view of the balcony. Each skewer goes straight from the fire to the table, still crackling and at its juiciest. Just 15 guests dine at a time, and every one of them sits within sight of the grill.
Takuhei Yamada has cooked Japanese food for 26 years, from Akasaka to his own yakitori counter in Kagurazaka.
Yamada-san trained in washoku in Akasaka from 2007, then farmed and ran his own inn on Okinoerabu Island. In 2022, he opened Torimitsu, a 13-seat yakitori counter in Kagurazaka. For three months, him and his team cook on our balcony at Orchard Central.
Can I also order from the Tanuki Raw menu? Yes, but please note each guest must order the 8-skewer omakase from Torimitsu. Additional skewers and the Tanuki Raw menu may be ordered in addition to the omakase sets.
Why do I need to book? We host 15 guests at a time, and slots are available on a first-come-first-serve basis. Booking is the only way you can be assured of a seat.
When can I come? You can book for 6pm onwards.
Where will I be seated, and is it outdoors? Torimitsu is served al fresco on Tanuki Raw's 4th-floor balcony, with plenty of fans to keep the air moving. Yakitori over charcoal, under the evening sky. Please dress for a warm Singapore night. The balcony is sheltered from rain.
