Blue Burger
We recognize the burger craze in Singapore. Who doesn’t love a good, juicy hamburger? A brilliant menagerie of flavors, the beefy bite nestled between fluffy buns… it’s delicious! There have been many fine restaurants trying to create the best burger; each one building on the complexity of what has come before.
You would think with all these burger creations that pretty much all types would have been covered by now. But they aren’t, and lucky for us the missing type of burger in Singapore is exactly the style we love to do. The rare or blue burger. After all, isn’t the foundation of a good burger the meat? And with good beef… you serve it rare! Yet “rare” is the restaurant that prepares a burger less than medium.
Our Blue Burger is made from premium wagyu beef short rib. A 250g cut of meat that we hand-chop and season so its texture is more of tartare than patty. Being one solid cut, we are able to serve it blue - lightly seared on the outside to create a depth of flavour and near raw on the inside to bring out the pure beef taste seasoned with our blend of spices. Our hamburger bun is made in-house; it’s a fluffy Hokkaido milk bread mixed with a soft Western-style potato bun from Japanese bread flour for a softer, finer texture. The burger is served with Emmental cheese, house-pickled vegetables, and on the side mentaiko cheese waffle-cut fries made from US Russet potatoes.
